DESCRIPTION

Castello di Solomeo's bouquet has great structure but is balanced and enduring at the same time, whose aromatic complexity is designed not to overpower its softness. The pervasiveness and fullness blend with the tannic part to express volume and roundness on the palate, denoting its extremely velvety and persistent taste-related aspects.

Olfactory Notes: A complex, rich and varied bouquet with earthy, fruity and floral opening notes that blend together with delicate hints of green pepper, laurel, eucalyptus and nutmeg. Subtle mineral and balsamic undertones give vibrancy and liveliness.
Tasting Notes: Thick and silky on the palate, great expansion and density. A fresh and powerful wine, with tactile fragrance and tonicity.  
Seasonal Pattern: The abundant rains registered in May and June caused the vines’ life cycle to slow down, while the warm climate in the summer months of July and August favored a steady grape ripening process. The generosity of nature has borne fruit, giving us the perfect grapes to make an expressive wine supported by a very pleasant structure.

THE TERROIR

The vineyard rows move sinuously like wavy lines surrounding the two central fountains crowned by tall cypress trees. Seen from above, this design resembles concentric ripples expanding on the surface of water: an evocative image that reminds us of the beauty and harmony that Creation infuses into everything.

Planted in 2011, the vineyard covers an area of five hectares in which three different soil types alternate, each carefully matched to a specific grape variety being grown. “Artisan” working techniques, carried out strictly by hand, follow rhythms and processes that respect the needs and distinctive features of the terroir, climate and plants.

WINE-MAKING

In autumn, once the clusters have reached the ideal level of ripeness, the harvesting period is carried out exclusively by hand, the aim being to ensure the clusters remain as intact as possible. Once in the winery, the grapes are separated, cleaned and meticulously hand-checked, then being placed into oak vats for temperature-controlled fermentation.

Between 10 and 14 days later, the skins are separated from the “free-run juice” which is transferred by free flow to continue to the aging stage in new French oak barrels for about 16 months. Each barrel is matched to the individual wine obtained from each vineyard plot. At the end of this first period of aging, the wine will ultimately make up a single blend which, once bottled and arranged along the walls of the winery, will rest for no fewer than three years.
