the OLIVE OIL

An ancient secret lies within the olive. A balance of sensations, simple and authentic, born from the perfect harmony between man and nature.

Castello di Solomeo

The gentle lands surrounding the hamlet are home to the Oil Mill and the two olive groves that produce Castello di Solomeo oil. The monocultivar Dolce Agogia, a typical Umbrian variety from the Lake Trasimeno area, is grown on two plots of land covering a total of about 8 hectares.

THE ANCIENT "GREEN GOLD" OF UMBRIA

Every year, during the autumn season, the Dolce Agogia olive harvest follows a long tradition that has marked the history of agricultural wisdom in Umbria for centuries. The  cultivation of the olive groves, the harvesting of the olives, the pressing: these are moments of true memory. Ritual gestures that, renewed year after year, are handed down from generation to generation, keeping alive the authentic bond with the land of origin.

THE OLIVE GROVES

The oldest land is near the Wood of Spirituality, on the top of the hill overlooking the hamlet, where there are trees over 60 years old, majestic in their characteristic irregular and sculptural shapes, with high, imposing crowns.

The Parco Agrario is home to the most recent olive grove, planted in 2011, whose peculiar shape of concentric circles can be seen from afar, even before you reach the hamlet. Here the trees follow a graceful geometric patternthat seems to gently embrace Solomeo and its valley.

OIL PRODUCTION

Not far from the Winery, stands the Oil Mill where about 7,000 bottles of Castello di Solomeo olive oil are produced each year. The olives are harvested exclusively by hand in October, when the fruit is not fully ripe, in order to obtain a higher concentration of polyphenols from the Dolce Agogia variety.

Cold pressing produces a slightly bitter and spicy oil, rich in vitamins, polyphenols and unsaturated fats, which have been the basis of the Mediterranean diet for thousands of years.
