The Wine

In search of the perfect balance only nature can create

The grapes chosen to create Castello di Solomeo are Cabernet Franc, Cabernet Sauvignon and Merlot, from which the prestigious Bordeaux blend is made, to which Sangiovese grapes are added as a tribute to the winemaking tradition of Central Italy. This union produces a wine that is structured and at the same time rich in smoothness.

Kept beneath the silent vaults of the Winery, the vintages of Castello di Solomeo mature slowly over time. Within each bottle, time composes a story both unique and unrepeatable, expressing the harmonious bond between the fruits of the earth and the devoted work of human hands.

The Harvest

An ancient ritual

In autumn, once the clusters have reached the ideal level of ripeness, the harvesting period is carried out exclusively by hand, the aim being to ensure the grapes remain as intact as possible. 

Fermentation

A continuous transformation

Once in the Winery, the grapes are separated, cleaned and meticulously hand-checked, then being placed into oak vats for temperature-controlled fermentation.

Ageing

A necessary rest

After fermentation, the “free-run juice” continues its ageing journey in new French oak barrels for about 16 months. Each barrel is matched to the individual wine obtained from each vineyard plot.

Refinement

Time, the final ingredient

At the end of the ageing period, a new, delicate phase begins. The wine will ultimately make up a single blend which, once bottled and arranged along the walls of the Winery, will rest for no fewer than three years.
