The grapes chosen to create Castello di Solomeo are Cabernet Franc, Cabernet Sauvignon and Merlot, from which the prestigious Bordeaux blend is made, to which Sangiovese grapes are added as a tribute to the winemaking tradition of Central Italy. This union produces a wine that is structured and at the same time rich in smoothness.

Its roundness and body merge with the tannic component to express volume and fullness on the palate, revealing a velvety and persistent taste. The aromatic complexity accompanies each sip with pleasant surprise, never overpowering, allowing balance and longevity to define the bouquet’s distinctive character.

Castello di Solomeo 2020

Throughout the year, nature offered a harmonious seasonal rhythm, marked by a dry spring and a warm, radiant summer. This climatic balance allowed the vine to express itself with grace and vigor, resulting in a wine of solid structure, natural elegance, and great aging potential.

Its appearance reveals a deep ruby red, enriched by violet reflections that enhance its vibrancy and depth. The bouquet releases dark berries intertwined with delicate floral and spicy notes, while forest and balsamic hints emerge in the background. On the palate, it reveals both power and finesse—a rare balance of depth and harmony, leaving a refined and persistent impression.

With an alcohol content of 14% vol, the 2020 vintage was aged for sixteen months in new French oak barriques, followed by three years of bottle aging, where it matured into its most authentic form.

Castello di Solomeo 2019

A dry and temperate vintage, capable of instilling subtle strength and generous grace into the vine. From this balance comes a wine of great complexity, harmonious and long-lived, bearing the mark of a beautiful season.

It presents a deep ruby red, animated by vibrant violet reflections that reveal its vitality. The aroma is a refined weave: dark berries blend with floral and spicy notes, while subtle forest and balsamic accents complete a bouquet of rare finesse and depth.
The taste is vibrant and taut, supported by smooth, enveloping tannins and lively freshness that adds momentum and invites another sip. Power and harmony merge in a balance that enchants and lingers.

Aged for sixteen months in new French oak barrels, followed by four years of bottle aging, its identity was shaped with patience and mastery. With an alcohol content of 14% vol, the 2019 vintage unfolds as a story that matures and evolves over time.

Castello di Solomeo 2018

Abundant rains in May and June slowed the vegetative cycle, allowing the vine to breathe calmly, while the steady warmth of July and August guided the grapes toward harmonious ripening. Nature’s generosity took shape in a vintage of pleasant structure and expressive voice.

A vibrant, deep ruby red marks the heart of the visual experience, followed by a broad and complex bouquet: forest, fruit, and floral notes intertwine with hints of green pepper, bay leaf, eucalyptus, and nutmeg. Mineral and balsamic nuances enhance its momentum and vibrancy. On the palate, the wine is silky and dense, with notable expansion and richness. Its vibrant freshness and tactile tension make it both powerful and refined, enveloping and surprising with every sip.

The 2018 vintage matured for sixteen months in new French oak barrels, followed by a long five-year rest in bottle, sculpting its character with patience and depth. With an alcohol content of 14.5% vol, this wine offers a mature, intense, and luminous narrative—worthy of being cherished and celebrated

The Harvest

An ancient ritual

In autumn, once the clusters have reached the ideal level of ripeness, the harvesting period is carried out exclusively by hand, the aim being to ensure the grapes remain as intact as possible. 

Fermentation

A continuous transformation

Once in the winery, the grapes are separated, cleaned and meticulously hand-checked, then being placed into oak vats for temperature-controlled fermentation.

Ageing

A necessary rest

After fermentation, the “free-run juice” continues its ageing journey in new French oak barrels for about 16 months. Each barrel is matched to the individual wine obtained from each vineyard plot.

Refinement

Time, the final ingredient

At the end of the ageing period, a new, delicate phase begins. The wine will ultimately make up a single blend which, once bottled and arranged along the walls of the winery, will rest for no fewer than three years.
